It’s an age-old question. Should lobster rolls be served cold with mayonnaise or warm with butter? You can help us decide by taking our survey.
In short, there are basically two types of rolls. The Maine roll is served cold on a toasted split hot dog bun and slathered in a mayo sauce. The Connecticut roll is served warm, topped with butter sauce, also on a hot dog bun. If you are interested in a full discussion history of the Maine and Connecticut rolls, check out our post about this rivalry.

Southern Maine offers the best lobster rolls in the world. In fact, we published two round ups of the top choices in Portland Maine’s Old Port and the surrounding region. More recently, Bite into Maine, one of our favorites, won our inaugural March Madness Lobster Roll Bracket. I love their Maine-style roll with just a hint of wasabi. Runner up, High Roller, offers a great selection as well. Since I enjoy a touch of heat, the mango habanero mayo is my go-to there. For the Connecticut-style roll, our hands-down favorite is the brown butter roll at Eventide. Of course, you could always make your own.
